Can you imagine a better sweet course for a first dinner with new-to-us friends? They barbecued, we brought dessert and the meal was bookended with great conversation and oodles of wine. Our children (five of them at that) kept themselves happily entertained with their own activities and a joyous night was had by all. Don't you love the beginning of the summer season and it's social activities?
Buttermilk Biscuits with Strawberries and Mint-Chocolate Whipped Cream
- 4 cups all-purpose flour
- 4 tablespoons brown sugar
- 2 tablespoon baking powder
- 1 tsp cinnamon
- 1 cup butter, frozen
- 1 1/2 cup + 1/4 cup buttermilk
- 2 tablespoons coarse sugar
- 2 cups fresh strawberries, hulled and cut into quarters
Mint-Chocolate Whipped Cream
- 500 ml whipping cream
- 1/4 cup confectioners sugar
- 2 oz semi-sweet chocolate, shaved or grated
- 8 mint leaves, torn
Preheat the oven to 450 degrees.
Whisk together dry ingredients and then grate the butter. Mix it into the dry ingredients quickly and evenly.
Pour in 1 1/2 cups buttermilk and mix with the handle of a wooden spoon just until the dough comes together. Sprinkle flour onto a work surface and sump the dough out of the bowl. Pat into a circle, about 1.5" thick and using a 3" cookie cutter, cut 12 biscuits from the dough.
Brush rounds with the remaining 1/4 cup buttermilk and sprinkle with course sugar.
Bake on parchment-lined baking sheet for 11 minutes or until the tops are golden.
While the biscuits are baking, place the whipping cream and confectioners sugar in the bowl of a stand mixer and beat on high until it becomes a thick cream consistency. Add the shaved chocolate and torn mint and stir in with a spatula.
Remove the biscuits from the oven and allow to cool. Slice them in half and top the bottom portion with a dollop of whipped cream and a spoonful of berries. Add the other half of the biscuit and top that with more whipped cream and strawberries.
