I can’t go another day without telling you about these ice cream sandwiches. They’re the best of summer snacking – s’mores! ice cream! - in a four-bite treat, and seeing that they take less than three minutes to make, you really need to know about them.
There are far fancier versions of this campground-inspired frozen indulgence floating around the Internet these days, and while I’m tempted to spend an afternoon making the more sophisticated variations I’m seeing, the reality is I just don’t have the time. The pages of my mental countdown to the end of the school year are turning faster than I can keep up with, and if I have any hope of skipping town with my clan for a much needed vacation, I need to spend less time fretting about fancy food, and more time writing a month’s worth of work assignments. Add to this the fact that every time I make a gooey treat it disappears faster than the wine in the bottle on the counter, thanks to my children and their very hungry friends, it seems almost futile to spend hours on an otherwise very simple recipe.
So here you have it; the easiest s’mores ice cream sandwiches you’re going to find. Just be sure to make lots of extras; I hear the kids really like them.
S'mores Ice Cream Sandwiches
- 8 graham crackers
- 1 cup mini marshmallows (store-bought or homemade)
- 1/2 cup chopped chocolate
- 1 cup vanilla ice cream
1. Preheat the oven to broil. Place the graham crackers on a parchment-lined baking sheet and divide the marshmallows between four of the crackers, and the chocolate between the other four. Pop the tray in the oven for 1-2 minutes, or until the marshmallows are golden brown and the chocolate is melted.
2. Remove from the oven and allow to cool for 30 seconds. Top the marshmallow-covered crackers with 1/4 cup of ice cream. Finish the sandwich by placing the remaining crackers chocolate-side down on top.
3. Serve immediately.
