This dinner came together when I was feeling completely at a loss as to what to serve everyone after a busy day away from the house. We all walked in the door famished, and I was thisclose to suggesting we eat out - an all too frequent occurrence this summer - when inspiration struck.
I removed a bowl of creamy tzatziki and a past-their-prime package of pitas from the fridge, and chopped some boneless, skinless chicken thighs which were tossed in olive oil, garlic, oregano, lemon, salt, and pepper. The meat was pan-fried with some thinly sliced onion and grape tomatoes, and loaded on top of the aforementioned pitas, which I refreshed in the oven with a brush of oil and sprinkle of sea salt and minced garlic.
To round out the meal, I steamed some beans from the market leaving them a little crisp, and tossed them butter just before serving. It took less then 30 minutes from start to finish, and the kids will tell you this was hands down the best dinner they ate last week. In fact, I'm pretty sure this dish will make it into our weekly meal plan frequently in the coming months, when leftovers will double as a hearty school lunch the next day.
