Summer is not my favourite season, but I have to say, I'm quite enjoying it this year. It could be that the weather has mostly been on my side, bringing less heat and humidity than usual, which is kind of how I like it. It might also be because we've managed to make it through to the second week of August and I've yet to hear the dreaded "I'm bored" pass through the lips of anyone in the house, a sanity-saver for me, without a doubt.
Having said that, there is no denying that working from home with three kids in the house is no easy feat. Holy heck, what was I thinking? My teenagers are keeping typical teenage hours, which means they stay up and sleep in so late their breakfast is usually served around noon. The baby is on his second 20-minute nap of the day - if I'm lucky - by the time they stumble down the stairs, and absolutely no one is on the same sleep schedule in this house, Rob and I included.
We're making it work though, and I dare say we're even having fun. We still have our summer vacation to look forward to, a few bucket-list items to take care of, and plenty of salads to enjoy before root vegetable season kicks in.
This summer is definitely going to go down as the one where we ate kale Caesar salad with roasted chicken and buttery croutons more times than we can count. It's a dish I'm able to assemble with my eyes closed, which they sometimes are by six o'clock, let's be honest. My big boys can't get enough of it, and for those of you with little fellas, you should know I need two or three heads of romaine and four to six chicken breasts to make enough salad to feed these people of mine. #feedingteenboys
This week, I'm trying to branch out a little, though, and thankfully my recipe index is full of several salads we've enjoyed over the years. I'm making it my mission to revisit as many as possible in the coming weeks, before the farmers' markets replace the peaches with sweet potatoes, and soup season takes over.
